Pickled Peaches

Ingredients

  • 1 qt. vinegar
  • 6 lb. sugar (12 c.)
  • 12 lb. peeled peaches (6 qt.)
  • 1 Tbsp. ground cloves (optional)
  • 1 piece ginger root (optional)
  • 4 or 5 whole cinnamon sticks

Directions

    Make a syrup of the vinegar and sugar and add to a spice bag made of cloves and ginger root, if desired.

    Add cinnamon sticks to the syrup.

    Add peaches to this boiling syrup.

    Cook until the fruit can be easily pierced with a straw.

    Let stand in a covered kettle overnight.

    Next day, pack into sterilized jars.

    Fill jar to within 1/2 inch of the top with fruit and syrup.

    Put on cap, screw band tight and process in boiling water bath for 20 minutes.
