- 1 qt. vinegar
- 6 lb. sugar (12 c.)
- 12 lb. peeled peaches (6 qt.)
- 1 Tbsp. ground cloves (optional)
- 1 piece ginger root (optional)
- 4 or 5 whole cinnamon sticks
Directions

1Make a syrup of the vinegar and sugar and add to a spice bag made of cloves and ginger root, if desired.

2Add cinnamon sticks to the syrup.

3Add peaches to this boiling syrup.

4Cook until the fruit can be easily pierced with a straw.

5Let stand in a covered kettle overnight.

6Next day, pack into sterilized jars.

7Fill jar to within 1/2 inch of the top with fruit and syrup.

8Put on cap, screw band tight and process in boiling water bath for 20 minutes.
