- 3 lb. bell peppers
- 2 1/2 c. white vinegar
- 2 1/2 c. water
- 1 1/4 c. sugar
- 8 cloves garlic
- 2 tsp. salt
Directions

1Combine vinegar, water and sugar.

2Heat to boiling.

3Wash peppers.

4Remove seeds and ribs.

5Cut into 1/2-inch strips.

6Place strips in bowl and add enough boiling water to cover peppers. Cover bowl and let stand exactly 5 minutes.

7Drain.

8Pack peppers into jars.

9Place 1 garlic clove and 1/4 teaspoon salt in each jar. Pour hot liquid over peppers and seal.

10Makes 8 half pints.
