- 1 bunch radishes, greens young, greens only
- 2 teaspoons salt
- 1 teaspoon sugar
- 1/2 cup water
- 1 x soy sauce, tamari to taste
Directions

1Use greens fresh from the garden or from a top-grade produce store, saving radishes or another use.

2Wash greens, discarding any bits that don't look fresh.

3Chop coarsely.

4Combine in a bowl with the salt, sugar and water.

5Allow to sit 30 minutes to several hours in the refrigerator.

6Just before serving, drain and squeeze dry in a kitchen towel.

7Place in small serving bowl and add soy sauce to taste.
