- 1 lb. shrimp, peeled and cleaned
- 1 medium onion, sliced into rings
- 3/4 c. vegetable oil
- 3/4 c. white vinegar
- 1/4 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. celery seed
- 4 Tbsp. capers with juice
Directions

1Cook shrimp until pink and tender; drain and cool.

2Make alternate layers of shrimp and onion rings in a container with a lid that seals tightly.

3Mix all remaining ingredients; heat to a quick boil and pour over the shrimp and onions.

4Seal and refrigerate overnight or at least for 6 hours.

5Drain and serve.
