- 5 lb. fresh large or medium shrimp
- 7 tsp. salt
- 1 c. chopped celery tips
- 1/2 c. pickling spice
- 4 c. sliced onion
- 8 bay leaves
- 2 1/2 c. salad oil
- 3 tsp. salt
- 1 1/2 c. white vinegar
- dash of Tabasco sauce
- 5 tsp. celery seed
- 1/4 c. capers
Directions

1Pour boiling water over the shrimp, salt, celery tips and pickling spice.

2Simmer until pink.

3Drain and cool with cold water.

4Peel and devein.

5Alternate shrimp and onion in a shallow dish.

6Place bay leaves on top.

7Mix the remaining ingredients well and pour over shrimp.

8Refrigerate at least 24 hours before serving.

9Serves 10 people.
