Pickled Squash

Ingredients

  • 8 c. thinly sliced squash
  • 2 c. vinegar
  • ??? tsp. celery seed
  • 2 tsp. mustard seed
  • 1 heaping tsp. pickling spice
  • salt (enough to sprinkle over squash and onions)
  • 2 c. thinly sliced onions
  • 4 bell peppers or 1 1/2 c. plus 2 more squash
  • 3 c. sugar

Directions

    Combine squash and onions. Sprinkle with salt and let stand for 1 or 2 hours. Drain. Combine all other ingredients and bring to a rolling boil.

    Add squash and onions and bring back to a rolling boil.

    Make sure all squash is under liquid. Can and seal while hot.
