Pickled Yellow Squash

- 8 c. yellow squash, sliced thin
- 2 c. white onions, sliced thin
- 4 bell peppers (2 red, 2 green), sliced thin
- 2 c. white vinegar
- 3 c. sugar
- 2 Tbsp. mustard seed
- 2 Tbsp. celery seed
Directions

1Mix well.

2Salt to taste.

3Let stand for 1 hour and drain well.

4Bring to a boil the vinegar, sugar, mustard seed and celery seed.

5Pour mixture over drained squash.

6Bring back to boil for a short time (until peppers lose bright color).

7Remove from heat and put in hot sterilized jars.

8Makes 3 pints.
