Picnic Potatoes

- 4 to 5 lb. Idaho potatoes, boiled and peeled
- butter or margarine
- salt
- sugar
- pepper
- 1 medium onion, peeled and sliced
Directions

1Halve potatoes lengthwise; cut each half crosswise into 1/2-inch slices.

2Melt 3 tablespoons butter in skillet.

3Arrange enough potato slices in skillet to cover bottom.

4Season with 1/4 teaspoon salt and a dash of sugar and pepper.

5Saute for 10 minutes or until golden on bottom side.

6Turn with pancake turner.

7Saute for 5 minutes or until golden.

8Drain on paper towel and keep warm. Repeat until all potatoes are sauteed.

9Cook onion in 2 tablespoons of butter until just tender.

10Return all potatoes to skillet and garnish with onion rings.

11Yields 6 servings.
