  • 2 granny smith apples
  • 1 ounce lemon juice
  • 1 pint water
  • 2 ounces unsalted butter
  • 4 ounces brown sugar
  • 2 ounces golden raisins
  • 1 ounce walnuts
  • 2 fluid ounces brandy
  • 2 teaspoons cinnamon
  • freshly grated nutmeg
  • 1 teaspoon ground cloves
  • 5 ounces all-purpose flour
  • 1 tablespoon granulated sugar
  • 14 teaspoon salt
  • 4 ounces unsalted butter, chilled
  • 2 tablespoons cold water

Directions

    Saute apples in butter 2-3 minutes.

    Add walnuts & raisins.

    Flambe with brandy.

    Add sugar and spices.

    Saute a few minutes more.

    Combine flour, sugar and salt in a robot coupe.

    Add butter and pulse until small granules form.

    Add in 1 TB of water, adding more if necessary.

    Form, wrap and refrigerate.

    After cooled roll out and fill with apples and bake in 350 oven until golden brown.
