- 1 Tbsp. cornstarch
- 2 Tbsp. cold water
- 1 1/2 c. boiling water
- 6 Tbsp. sugar
- 1 tsp. vanilla
- 3 egg whites
- pinch of salt
Directions

1Blend cornstarch and cold water in a saucepan.

2Add boiling water.

3Cook, stirring, until clear and thickened.

4Let stand until cold.

5Beat egg whites until foamy with mixer at high speed. Gradually add sugar and beat until thick.

6With mixer at low speed, add salt, vanilla and cornstarch.

7Mix well.

8Turn mixer to high speed and beat until you can form stiff peaks.

9Spread over cooled pie filling and bake at 350° for 15 minutes.
