- 1 lb. almond paste
- 4 egg whites (use large eggs only)
- 1 c. sugar
- 1 or 2 tsp. almond extract
- 1/2 c. pignoli nuts
Directions

1Grease cookie sheet (use Pam to grease cookie sheet).

2Put almond paste in bowl and soften.

3Add egg whites, one at a time. Add cup of sugar and almond extract to mixture.

4Blend together, using an electric blender.

5Drop 1/2 teaspoon at a time on greased cookie sheet.

6Add pignoli nuts on top of cookies.

7Bake in 350° oven for 20 minutes and cool.
