Pignoli Cookies

  • 1 lb. almond paste
  • 4 egg whites (use large eggs only)
  • 1 c. sugar
  • 1 or 2 tsp. almond extract
  • 1/2 c. pignoli nuts

Directions

    Grease cookie sheet (use Pam to grease cookie sheet).

    Put almond paste in bowl and soften.
  3. 3
    Add egg whites, one at a time. Add cup of sugar and almond extract to mixture.

    Blend together, using an electric blender.
  5. 5
    Drop 1/2 teaspoon at a time on greased cookie sheet.
  6. 6
    Add pignoli nuts on top of cookies.

    Bake in 350° oven for 20 minutes and cool.
