  • 1 citrus juice each, and segments lemon lime, grapefruit, orange
  • 1 tablespoon honey
  • 1/2 cup champagne vinegar
  • 1/4 cup white vinegar
  • 1/2 cup olive oil
  • 1 cup radishes shaved thin
  • 1 cup red beets shaved thin
  • 1 cup golden beets shaved thin
  • 1 pork belly
  • 1/2 cup apple cider vinegar
  • 1/2 ounce kosher salt
  • 1/2 ounce ground black pepper
  • 1 tablespoon lemon zest
  • 1 tablespoon chili powder
