Ingredients

  • 1/2 c. yellow cornmeal
  • 1/3 c. brown sugar
  • 1 Tbsp. salt
  • 2 c. boiling water
  • 1/4 c. oil
  • 2 pkg. dry yeast
  • 1/2 c. warm water
  • 4 1/2 c. flour
  • 3 c. whole wheat flour
  • 1/2 rye flour

Directions

    Combine cornmeal, brown sugar and salt in a bowl.

    Stir in gradually 2 cups boiling water; add oil.

    Cool to lukewarm. Combine flours in a bowl.

    Dissolve yeast in 1/2 cup warm water. Combine cornmeal, flour and yeast mixtures.

    Knead until smooth and elastic.

    Place in greased bowl and let rise until double.

    Punch dough down.

    Divide in half and knead 3 minutes.

    Shape into 2 greased loaf pans.

    Cover and let rise in warm place until double. Bake at 375° about 45 minutes.
