- 2 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup light corn syrup
- 1/3 cup corn oil
- 1/4 cup rum
- 1 (8 ounce) can crushed pineapple in juice, undrained
- 1 cup flaked coconut
Directions

1Preheat oven to 350.

2Grease and flour 9x5x3 inch loaf pan.

3In a medium bowl combine flour,sugar,baking powder,baking soda and salt.

4In a large bowl with mixer at medium speed,beat eggs,corn syrup,corn oil and rum until blended.

5Gradually stir in flour mixture just until moistened.

6Stir in pineapple and coconut.

7Pour into prepared pan.

8Bake 60-65 minutes.

9Cool in pan 10 minutes.

10Remove from pan and cool on wire rack.
