Ingredients

  • 1 (8 oz.) can unsweetened pineapple chunks (undrained)
  • 1 large banana, sliced
  • 15 ice cubes
  • 1 c. low-fat milk or soy milk
  • 1/2 c. pineapple-orange banana juice
  • 1/2 tsp. rum extract
  • 1/2 tsp. coconut extract
  • 1 c. low-fat milk or soy milk
  • 2 Tbsp. low-fat cottage cheese
  • 1 Tbsp. 100% raspberry preserves
  • 1/2 tsp. lime juice
  • frozen raspberries (to decorate)

Directions

    Blend all the ingredients together until the cottage cheese is smooth.

    Taste and add more lime juice, if required.

    Serve in a chilled glass and decorate with a few frozen raspberries.
