- 2 large egg whites
- Small pinch of salt
- 3/4 cup plus 2 tablespoons sugar
- 1/4 teaspoon pure vanilla extract
- Scant 1/4 teaspoon pure almond extract
- 1 1/2 cups almond meal or finely ground blanched almonds (about 6 ounces)
- 2 1/4 cups pine nuts (3/4 pound)
Directions

1Preheat the oven to 375 and line several baking sheets with parchment or wax paper.

2In a large bowl, beat the egg whites with the salt on high speed until firm peaks form.

3Add the sugar, 2 tablespoons at a time, beating for 2 seconds between additions; beat until glossy and stiff.

4Add the vanilla and almond extracts, then fold in the almond meal.

5Spread the pine nuts on a pie plate.

6Coat slightly rounded teaspoons of the meringue with the pine nuts.

7Arrange the meringues on the baking sheets about 1 inch apart, and bake in batches for 15 to 18 minutes, or until golden.

8Slide the paper with the meringues onto wire racks and let cool completely.

9Remove the meringues from the paper and serve.
