Ingredients
- 2 1/2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 3/4 c. sugar
- 1/3 c. butter, melted
- 1 egg
- 1/4 c. milk
- 1 (8 oz.) can crushed pineapple, undrained
- 1/3 c. chopped dried apricots
- 1/4 c. raisins
- 1 c. chopped pecans
Directions

1Combine first 4 ingredients; set aside.

2Combine sugar, butter and egg; beat well.

3Add milk, pineapple, apricots and raisins; beat well.

4Stir in flour mixture and pecans.

5Pour mixture into a greased and floured 9 x 5 x 3-inch loaf pan.

6Bake at 350° for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean.

7Cool 10 minutes in a pan on a wire rack.

8Remove from pan.

9Yield: 1 loaf.
