- 1 lb. filo dough
- 1 (20 oz.) can crushed pineapple
- 1 (8 oz.) pkg. cream cheese
- 1 1/2 c. Ricotta cheese
- 1 1/2 c. sugar
- 1/2 c. water
- 3 egg yolks
- 1 tsp. grated lemon peel
- 1 tsp. vanilla
- 1 c. rendered butter
- 2 tsp. lemon juice
Directions

1Drain pineapple and save syrup.

2In mixer, combine cream cheese, Ricotta cheese, 1/2 cup sugar, egg yolks, lemon peel and vanilla.

3Blend well together.

4Stir in drained pineapple.

5Place a leaf of filo in a well buttered 9 x 12 x 2-inch baking pan. Brush with melted butter and repeat with 8 leaves.

6Spoon on pineapple cheese mixture and spread evenly.

7Top with remaining filo leaves, brushing each with melted butter.
