  • 2 medium pineapples
  • 2 pt. raspberries or strawberries
  • 1/3 c. raspberry preserve
  • 3 oz. pkg. softened light cream cheese
  • 1 Tbsp. no-fat milk
  • 1/2 tsp. finely shredded lemon peel
  • 2 tsp. lemon juice
  • 1/2 c. whipping cream

    Cut pineapple in half lengthwise.

    Using a sharp knife, cut out the pineapple meat, leaving the pineapple intact.

    Cut off hard core, then cut in chunks.

    Combine pineapple chunks and raspberries or strawberries.

    Mound into pineapple shells.
