Ingredients

  • 1 (20 oz.) can pineapple tidbits
  • 1/2 c. packed brown sugar
  • 1/2 c. flaked coconut
  • 1/2 tsp. cinnamon and nutmeg
  • 1/4 c. butter, melted
  • 1 c. plain croutons
  • vanilla ice cream or whipped topping

Directions

    Drain pineapple, reserving 1/2 cup syrup.

    Mix pineapple with sugar, coconut and spices.

    Mix pineapple syrup and next 2 ingredients.

    Spoon half the crouton mixture into shallow 1 1/2-quart baking dish.

    Cover with half the pineapple mixture, remaining crouton mixture and the pineapple.

    Bake in preheated 375° oven for 40 minutes.

    Serve warm with ice cream.
