Pineapple Butter

- 1 (8.5 oz.) can crushed pineapple in syrup
- 1 Tbsp. brandy
- 1 c. butter, softened
- 1/2 c. powdered sugar
Directions

1Drain pineapple, reserving syrup.

2Place pineapple in blender and puree.

3Set aside.

4Place syrup in a small saucepan and bring to a boil.

5Boil, uncovered, until reduced to 1 tablespoon. Remove from heat and stir in brandy.

6Cool to room temperature. In a large bowl, beat butter until fluffy; gradually add sugar. Fold in pureed mixture.

7Serve on any bread.

8Makes about 2 cups.
