Pineapple Cake

- 2 1/4 c. self-rising flour
- 1 1/2 c. sugar
- 1/2 c. Crisco
- 2 eggs
- 1 c. milk
- 1 tsp. vanilla
- 1 large can pineapple with juice
- 1 c. chopped nuts
- 1 c. frozen coconut
- 1 pkg. Cool Whip
Directions

1Sift flour and sugar in mixing bowl.

2Add Crisco, eggs, milk and vanilla.

3Mix all ingredients well.

4Bake in a 9 x 13-inch pan at 350° for 25 to 30 minutes.

5Let cake cool in pan.

6Top with pineapple, chopped nuts and Cool Whip.

7Sprinkle with coconut. Let cake set before serving.
