Pineapple Cake

  • 2 1/4 c. self-rising flour
  • 1 1/2 c. sugar
  • 1/2 c. Crisco
  • 2 eggs
  • 1 c. milk
  • 1 tsp. vanilla
  • 1 large can pineapple with juice
  • 1 c. chopped nuts
  • 1 c. frozen coconut
  • 1 pkg. Cool Whip

Directions

    Sift flour and sugar in mixing bowl.

    Add Crisco, eggs, milk and vanilla.

    Mix all ingredients well.

    Bake in a 9 x 13-inch pan at 350° for 25 to 30 minutes.

    Let cake cool in pan.

    Top with pineapple, chopped nuts and Cool Whip.

    Sprinkle with coconut. Let cake set before serving.
