- 3 c. flour
- 2 c. sugar
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 3/4 tsp. salt
- 3 eggs
- 2 c. shredded carrots
- 1 c. vegetable oil
- 1 (8 oz.) can drained, crushed pineapple
- 1 c. chopped nuts
- 2 tsp. vanilla
- 3/4 c. confectioners sugar (optional)
- 1 to 1 1/2 tsp. milk (optional)
Directions

1In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt.

2In another bowl, beat eggs; add carrots, vegetable oil, pineapple, nuts and vanilla.

3Stir into dry ingredients just until moistened.

4Spoon into 2 greased and floured (8 x 4 x 2-inch) loaf pans.

5Bake at 325° for 55 to 60 minutes, and test for doneness.

6Cool 10 minutes before removing from pans.

7Cool completely.
