- 1 (No. 2) can crushed pineapple
- 1 pkg. lemon Jell-O
- 1/2 c. sugar
- 1/4 tsp. salt
- 2 Tbsp. lemon juice
- 1 c. grated carrots
- 1/2 pt. whipping cream
Directions

1Drain pineapple and add enough water to syrup to make 1 1/2 cups.

2Heat; add to Jell-O.

3Stir in sugar, salt and lemon juice. Chill until slightly thickened.

4Fold in pineapple and grated carrot.

5Whip cream and fold into Jell-O mixture.

6Pour into 8-inch ring mold.

7Best to make a day ahead to be sure it is thoroughly set.
