Pineapple Casserole

  • 1 (20 oz.) can pineapple chunks
  • 1/2 c. sugar
  • 3 Tbsp. all-purpose flour
  • 1 c. shredded Cheddar cheese
  • 1/4 c. melted margarine
  • 1/2 c. buttery Ritz cracker crumbs

Directions

    Drain pineapple, reserving 3 tablespoons of juice.

    Combine sugar and flour and stir in pineapple juice.

    Add cheese and pineapple chunks.

    Mix well and spoon into greased casserole dish. Combine melted margarine and cracker crumbs, stirring well. Sprinkle over pineapple mixture.

    Bake at 350° for 20 to 30 minutes or until crumbs are lightly browned.
