Pineapple Cheddar Salad

  • 1 (3 oz.) pkg. lemon gelatin
  • 1 c. boiling water
  • 1 (8 oz.) can crushed pineapple (undrained)
  • 1 c. shredded mild Cheddar cheese
  • 3/4 c. sugar
  • 1/2 pt. whipping cream
  • 1/2 c. chopped pecans

Directions

    Dissolve gelatin in boiling water.

    Stir in sugar and pineapple; cool.

    While cooling, whip cream and grate the cheese. Fold into gelatin mixture.

    Add pecans.

    Spoon into a 9-inch square pan.

    Chill until firm.

    Cut into squares.
