Pineapple Cheese Mousse

  • 2 envelopes unflavored gelatin
  • 1 can crushed pineapple
  • 3 Tbsp. lemon juice
  • 1/3 c. sugar
  • pinch of salt
  • 1/3 lb. Cheddar cheese, shredded
  • 1 c. heavy whipped cream
  • 1/2 c. cold water

Directions

    Soften gelatin in 1/2 cup of cold water.

    Put on medium heat; cook.

    Add heated pineapple and stir to dissolve the gleatin. Remove from heat.

    Add lemon juice, sugar and salt.

    Chill until syrupy.

    Fold in cheese and cream.

    Pour into a mold.

    Chill until firm.
