Pineapple Chutney

Ingredients

  • 1 fresh pineapple
  • 3/4 c. vinegar
  • 3/4 c. brown sugar
  • 4 to 8 oz. raisins
  • 1/2 tsp. salt
  • 1 Tbsp. fresh ginger
  • 1 Tbsp. garlic
  • 1 large seeded chili pepper
  • 1/2 c. chopped Macadamia nuts

Directions

    Peel pineapple; remove core.

    Chop to the size you wish. Place in pot with remaining ingredients and cook at least 30 minutes or longer, if you want thicker chutney.

    Pour into hot, sterilized jars.
