Pineapple Chutney

Ingredients

  • 1 (8 oz.) can pineapple tidbits (undrained)
  • 1 c. packed light brown sugar
  • 1/4 c. white wine vinegar
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/2 c. sliced almonds
  • 1/2 c. golden raisins
  • 1/2 c. chopped green pepper
  • 2 Tbsp. chopped crystallized ginger
  • 2 Tbsp. cornstarch

Directions

    Drain pineapple, reserving 1/2 cup juice. Combine juice, sugar, vinegar, garlic and salt in a saucepan; stir well. Cook uncovered over medium heat for 15 minutes; stir occasionally.

    Add tidbits, almonds and remaining ingredients, stirring well. Cook until green pepper is tender. Serve with lamb or curried chicken. Makes 2 cups.
