Pineapple Coconut Cloud Pie

- 1 (1 lb. 4 1/2 oz.) can crushed pineapple
- 1 1/4 c. sugar
- 1/2 tsp. salt
- 1/3 c. sifted flour
- 3 eggs
- 1 Tbsp. butter
- 1 Tbsp. lemon juice
- 1 baked 9-inch pie shell with fluted rim
- 3 Tbsp. water
- 1 tsp. vanilla
- 1/2 c. coconut, flaked
Directions

1Combine undrained pineapple, 1/2 cup sugar, 1/4 teaspoon salt and flour.

2Cook over medium heat for about 5 minutes, stirring constantly, until thickened.

3Remove from heat and stir half the pineapple mixture into beaten egg yolks.

4Combine with remaining hot mixture.

5Cook a minute longer.

6Remove from heat; stir in butter and lemon juice.

7Cool.

8Turn into baked pie shell.
