Pineapple Coconut Cloud Pie

  • 1 (1 lb. 4 1/2 oz.) can crushed pineapple
  • 1 1/4 c. sugar
  • 1/2 tsp. salt
  • 1/3 c. sifted flour
  • 3 eggs
  • 1 Tbsp. butter
  • 1 Tbsp. lemon juice
  • 1 baked 9-inch pie shell with fluted rim
  • 3 Tbsp. water
  • 1 tsp. vanilla
  • 1/2 c. coconut, flaked

Directions

    Combine undrained pineapple, 1/2 cup sugar, 1/4 teaspoon salt and flour.

    Cook over medium heat for about 5 minutes, stirring constantly, until thickened.

    Remove from heat and stir half the pineapple mixture into beaten egg yolks.

    Combine with remaining hot mixture.

    Cook a minute longer.

    Remove from heat; stir in butter and lemon juice.

    Cool.

    Turn into baked pie shell.
