Pineapple-Coconut Pie

  • 2 c. sugar
  • 4 eggs
  • 3 Tbsp. flour
  • 1 stick butter
  • 1 small can crushed pineapple
  • 2 c. coconut
  • 1/4 c. water
  • 2 unbaked pie shells
  • dash of salt

Directions

    Mix flour, sugar and salt in bowl.

    Add eggs, pineapple, water and coconut.

    Pour into unbaked pie shells.

    Cook in 400° oven until pie begins to brown, then reduce heat to 300° until pie is firm.

    Makes 2 pies.
