Pineapple Coffee Cake

Ingredients

  • 1/4 c. butter
  • 3/4 c. sugar
  • 1 egg
  • 1 1/4 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 c. pineapple juice
  • 3 tsp. crushed pineapple
  • 1/2 c. rolled oats
  • 1/4 c. brown sugar
  • 1/2 tsp. cinnamon
  • 2 Tbsp. melted butter
  • 1/2 c. chopped walnuts
  • 1/2 c. raisins

Directions

    Cream butter and sugar until light and fluffy.

    Add egg; beat well.

    Sift together dry ingredients and add to creamed mixture alternately with pineapple juice.

    Stir in crushed pineapple. Turn into greased baking pan.

    Combine rolled oats, brown sugar, cinnamon, melted butter, chopped walnuts and raisins.

    Sprinkle over top of batter.

    Bake at 375° for 25 minutes or until done.
