Pineapple Crumble Bars

  • 1 1/2 cups all-purpose flour
  • 3/4 cup Land O Lakes Butter, softened
  • 1/2 cup sugar
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 (20-ounce) can crushed pineapple, well-drained
  • 2 teaspoons lemon juice
  • 1/3 cup sliced almonds

    Heat oven to 350F.

    Combine all crust ingredients in medium bowl.

    Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs.

    Reserve 1 cup; set aside.

    Press remaining crumb mixture onto bottom of greased 13x9-inch baking pan.

    Bake 10 minutes.

    Meanwhile, stir together 1/2 cup sugar and cornstarch in 2-quart saucepan.

    Add pineapple and lemon juice; mix well.

    Cook over medium heat, stirring constantly, 4-5 minutes or until mixture is thickened.

    (Mixture will be very thick.)

    Spoon filling over hot, partially baked crust; sprinkle with reserved crumbs.

    Continue baking 15-20 minutes or until lightly browned.
