Pineapple Fried Brown Rice

Ingredients

  • 1/2 cups Diced Yellow Onion
  • 2 Tablespoons Olive Oil
  • 4 cups Cooked Brown Rice
  • 1 whole Egg, Beaten
  • 4 Tablespoons Chopped Cilantro
  • 3 whole Scallions, Sliced (white And Light Green Parts)
  • 2 Tablespoons Sesame Oil
  • 1-1/2 cup Fresh Pineapple Chunks
  • 1/4 cups Sliced Toasted Almonds

Directions

    Saute onions in olive oil over medium heat until tender, 3 minutes. Stir in rice and egg. Continue stirring until hot and egg has been cooked and looks scrambled. Stir in remaining ingredients. Remove from heat and spoon into serving bowl.
