Pineapple Ham Loaf

  • 1 lb. ground smoked ham
  • 1 lb. ground lean fresh pork
  • 2 eggs
  • 3/4 c. soft bread crumbs
  • 3/4 c. milk
  • 2 Tbsp. catsup
  • 8 pineapple slices, drained

Directions

    Mix together ham, pork, eggs, bread crumbs, milk and catsup. Divide meat mixture into 9 equal parts.

    Shape into patties.

    In shallow 13 x 9-inch baking dish, form a long roll alternating 1 patty and 1 pineapple slice, starting and ending with meat mixture. Bake at 350° for 30 minutes.

    Prepare Spicy Glaze used to baste. Bake 1 hour longer, basting every 20 minutes.
