Pineapple Icebox Cake

  • 1/2 lb. vanilla wafers or butter cookies
  • 1/2 c. butter
  • 1 1/2 c. powdered sugar
  • 2 eggs, unbeaten
  • 1 small (9 oz.) can crushed pineapple, drained
  • 1/2 pt. whipping cream

Directions

    Grind the wafers or roll them into crumbs and put 1/2 of them in the bottom of your pan.

    Cream butter and sugar; add eggs, 1 at a time.

    Beat until smooth and creamy.

    Pour this mixture over the crumbs.

    Whip the whipping cream.

    Add the pineapple and pour over the first mixture.

    Cover with the rest of the crumbs and put in icebox overnight.
