- 4 boneless skinless chicken breast halves
- 1 12 cups finely chopped macadamia nuts
- 12 teaspoon seasoning salt
- 12 teaspoon caribbean jerk seasoning
- 14 teaspoon dried onion flakes
- 14 teaspoon onion powder
- 14 teaspoon pepper
- 2 eggs, lightly beaten
- 14 cup vegetable oil
- 12 cup crushed pineapple
- 2 tablespoons apricot preserves, warmed
