Ingredients

  • 1 (20 oz.) can crushed pineapple
  • 2 cans (14 oz.) sweetened condensed milk
  • 2 pkg. (7 oz.) flaked coconut
  • 1 (3.75 oz.) pkg. whole almonds, toasted and chopped
  • 1 c. melted butter
  • 2 tsp. freshly grated lemon peel
  • 1/2 tsp. almond extract
  • 2 c. flour
  • 2 tsp. baking powder

    Drain pineapple well.

    Combine next ingredients (6).

    Combine flour and baking powder.

    Beat into pineapple mixture until blended.

    Spoon by heaping tablespoon 1-inch apart onto greased baking sheet.

    Bake at 350° for 13 to 15 minutes.

    Remove to wire rack to cool.

    Store in refrigerator.

    Makes 4 1/2 dozen cookies.
