  • 1 c. unbleached flour
  • 3/4 c. raw wheat germ
  • 2 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/3 c. light brown sugar
  • 1 beaten egg
  • 1/3 c. salad oil
  • 1 c. undrained crushed pineapple

Directions

    Sift flour, baking powder, salt and cinnamon.

    Blend in sugar and wheat germ.

    Combine egg, oil and pineapple and add to flour mixture.

    Stir only until moistened.

    Fill greased muffin tins 2/3 full.

    Bake at 400° approximately 20 minutes.
