Pineapple-Noodle Pudding

  • 1/2 c. apple juice
  • 2 eggs, beaten
  • 1/2 c. crushed pineapple
  • 2 Tbsp. granulated sugar
  • 1/4 c. raisins
  • 2 tsp. canola oil
  • 1/2 tsp. vanilla
  • pinch of cinnamon
  • pinch of ground nutmeg
  • 6 oz. egg noodles, cooked and drained
  • 2 tsp. margarine

    Preheat oven to 350°.

    Spray an 8-inch square baking pan with nonstick cooking spray.

    In a large bowl, thoroughly combine all ingredients except margarine.

    Scrape mixture into prepared pan. Dot evenly with margarine.

    Bake 35 to 40 minutes, until set and lightly browned.
