Pineapple Nut Bread

Ingredients

  • 2 c. plain flour
  • 3/4 c. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 (8 oz.) can crushed pineapple
  • 1/2 to 1 c. pecans
  • 1 egg
  • 2 Tbsp. oleo
  • 1 tsp. vanilla
  • 1 tsp. soda
  • 1 c. white raisins

Directions

    Combine flour, sugar, baking powder and salt. Set aside.

    Beat egg. Add oleo and vanilla. Dissolve soda in pineapple.

    Add egg mixture. Add dry ingredients and stir just enough to moisten. Add raisins and pecans. Spoon batter into a greased 8 1/2 x 5 x 3-inch loaf pan. Bake at 350° for 50 to 60 minutes or until done.
