Pineapple Pecan Bread

- 1/4 c. shortening
- 3/4 c. firmly packed brown sugar
- 1 egg
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/3 c. frozen orange juice concentrate, thawed and undiluted
- 1 (8 oz.) can crushed pineapple
- 3/4 c. chopped pecans
Directions

1Cream shortening, gradually add sugar, beating well at medium speed of an electric mixer.

2Add egg, beating well.

3Combine flour, baking soda and salt; add to cream mixture, alternating with juice and beating well after each addition.

4Stir in pineapple and pecans.

5Pour batter into greased and floured loaf pan.

6Bake at 350° for 50 to 55 minutes.

7Cool in pan 10 minutes then remove to rack.

8Cool completely.
