- 2 c. diced potatoes
- 3 Tbsp. uncooked rice
- 3/4 lb. ground beef
- 1 medium green pepper
- 1 medium onion
- 2 carrots, chopped
- 1 (No. 3) can whole tomatoes
- 1 tsp. salt
- 1/2 tsp. sugar
Directions

1Place a thick layer of raw potatoes in a casserole dish which has been buttered.

2Sprinkle rice over potatoes.

3Cover rice with ground beef.

4Add layer of chopped carrots, then green peppers, onions, salt and sugar.

5Add tomatoes which you have chopped up with the juice.

6Cover tightly and cook at 350° for 2 1/2 hours.
