Pineapple Pecan Muffins

Ingredients

  • 1 1/4 c. milk
  • 1 1/2 c. All-Bran
  • 1 1/2 c. flour
  • 1/3 c. sugar
  • 1/2 tsp. salt (optional)
  • 3 tsp. baking powder
  • 1 beaten egg
  • 1/4 c. salad oil
  • 1/4 c. chopped pecans, dusted with 1/2 tsp. flour
  • 1/2 c. well drained pineapple

Directions

    Combine milk and bran in large bowl.

    Let set 5 minutes.

    Sift flour, sugar, salt and baking powder.

    Add egg, oil and dry ingredients to milk and bran.

    Mix only until all ingredients are moist, should be lumpy.

    Stir in pecans and pineapple.

    Fill greased muffin tins 2/3 full and bake at 400° for 20 to 25 minutes.

    Yields fourteen muffins.
