Pineapple Pecan Muffins

Ingredients
- 1 1/4 c. milk
- 1 1/2 c. All-Bran
- 1 1/2 c. flour
- 1/3 c. sugar
- 1/2 tsp. salt (optional)
- 3 tsp. baking powder
- 1 beaten egg
- 1/4 c. salad oil
- 1/4 c. chopped pecans, dusted with 1/2 tsp. flour
- 1/2 c. well drained pineapple
Directions

1Combine milk and bran in large bowl.

2Let set 5 minutes.

3Sift flour, sugar, salt and baking powder.

4Add egg, oil and dry ingredients to milk and bran.

5Mix only until all ingredients are moist, should be lumpy.

6Stir in pecans and pineapple.

7Fill greased muffin tins 2/3 full and bake at 400° for 20 to 25 minutes.

8Yields fourteen muffins.
