Pineapple "Philly" Pie

Ingredients
- 1/3 c. sugar
- 1 tsp. cornstarch
- 1 c. crushed pineapple (not drained)
- 8 oz. cream cheese
- 1/2 tsp. salt
- 1/2 c. sugar
- 2 eggs
- 1/2 c. milk
- 1/2 tsp. vanilla
- 9-inch unbaked pie crust
- 1/4 c. chopped pecans
Directions

1Blend 1/3 cup sugar with cornstarch; add pineapple.

2Cook, stirring constantly, until mixture is thick and clear.

3Cool. Place the cream cheese in a bowl and cream it until soft and smooth.

4Slowly blend in 1/2 cup sugar and salt.

5Add eggs, stirring well after each egg is added.

6Blend in milk and vanilla. Spread cooled pineapple mixture over bottom of pie crust.

7Pour in cream cheese mixture and sprinkle with chopped pecans.

8Bake at 400° for 10 minutes, then reduce to 325° for additional 50 minutes.

9Cool before serving.
