- 1 (9-inch) unbaked pie shell
- 2/3 c. Parmesan cheese
- 1/2 c. grated Cheddar cheese
- 2 Tbsp. finely chopped onion
- 2 Tbsp. finely chopped green pepper
- 2 oz. pepperoni, chopped
- 1 1/2 c. half and half
- 2 eggs, beaten
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. oregano
- 1 (8 oz.) can tomato sauce
Directions

1Chill pie shell 30 minutes.

2Preheat oven to 400°.

3Sprinkle bottom of pie shell with cheeses, onion, pepperoni and green pepper.

4In a medium bowl, combine half and half, eggs, flour, seasonings and 4 tablespoons of the tomato sauce.

5Pour egg mixture into the pie shell.

6Bake 15 minutes; reduce oven heat to 325° and bake 30 minutes longer.

7Remove from the oven and spread remaining tomato sauce over the quiche.

8Let stand at least 10 minutes before cutting into wedges.
