  • 2 eggs
  • 1 c. sugar
  • 4 T. flour
  • 1 small can crushed pineapple, undrained
  • Dash of vanilla
  • 1/2 c. (1 stick) margarine
  • 1/2 c. coconut
  • Pecans, optional
  • 1 unbaked pie shell

Directions

    Preheat oven to 500°.

    Beat 2 eggs in mixing bowl; add sugar, flour, pineapple (including juice), vanilla, margarine and coconut. Pecans can be added if desired. Pour into unbaked pie shell. Bake at 500° for 30 minutes.
