Pineapple Pie

  • 1 small can crushed pineapple
  • 3 eggs
  • 2/3 c. milk
  • 2 Tbsp. flour (piling up)
  • 1 c. sugar
  • pinch of salt
  • 1 cooked pie shell

Directions

    Drain pineapple; set aside.

    Beat eggs (saving 2 whites for meringue); add milk.

    Mix flour, sugar and salt and add to egg mixture.

    Add juice from pineapple.

    Cook in top of double boiler (or directly over low heat, stirring constantly) until thick. Fold in pineapple and pour into cooked pie shell.

    Top with meringue and bake at 350° until meringue is golden brown.
