- 1 small can crushed pineapple
- 3 eggs
- 2/3 c. milk
- 2 Tbsp. flour (piling up)
- 1 c. sugar
- pinch of salt
- 1 cooked pie shell
Directions

1Drain pineapple; set aside.

2Beat eggs (saving 2 whites for meringue); add milk.

3Mix flour, sugar and salt and add to egg mixture.

4Add juice from pineapple.

5Cook in top of double boiler (or directly over low heat, stirring constantly) until thick. Fold in pineapple and pour into cooked pie shell.

6Top with meringue and bake at 350° until meringue is golden brown.
