- 1 (# 2) can crushed pineapple (2 1/2 c.)
- 1/2 c. sugar
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 3 egg yolks
- 2 Tbsp. oleo
- 1 Tbsp. fresh lemon juice
- 1 baked pie crust
Directions

1Mix the sugar, cornstarch and salt, together, set aside. In a medium sauce pan heat the pineapple then add the sugar mixture all at once while stirring briskly.

2Cook until thick and clear.

3Beat egg yolks in a bowl, stir a little of the hot mixture into them; return to the pan and cook 1 minute stirring constantly.

4Remove from heat and stir in oleo and lemon juice.
