- 2 lb. yellow squash
- 1 can cream of chicken soup
- 1 small sour cream
- 1 grated carrot
- 1 medium onion, finely chopped
- 1 small jar pimentos
- 1 pkg. Pepperidge Farm corn bread stuffing
- 1 stick oleo, melted
- 1 tsp. salt
- 1/2 tsp. pepper
Directions

1Slice and boil squash in salted water about 7 minutes; drain. Add cream, grated carrot, onion, pimentos and pepper.

2Saute stuffing mix in melted oleo.

3Use 1/2 of stuffing in casserole and put other 1/2 on top.

4Bake for 45 minutes at 350°.
