Squash Casserole

Ingredients

  • 2 lb. yellow squash
  • 1 can cream of chicken soup
  • 1 small sour cream
  • 1 grated carrot
  • 1 medium onion, finely chopped
  • 1 small jar pimentos
  • 1 pkg. Pepperidge Farm corn bread stuffing
  • 1 stick oleo, melted
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

    Slice and boil squash in salted water about 7 minutes; drain. Add cream, grated carrot, onion, pimentos and pepper.

    Saute stuffing mix in melted oleo.

    Use 1/2 of stuffing in casserole and put other 1/2 on top.

    Bake for 45 minutes at 350°.
